P.F. Chang's China Bistro & Pei Wei Asian Diner

P.F. Chang's China Bistro is a popular chain of upscale Asian bistros serving traditional Chinese cuisine. The restaurant concept was created by Paul Fleming (whose initials are PF) and Philip Chiang who apparently lost an "i" in the naming of the chain. The first restaurant was opened at the Scottsdale Fashion Square in 1993. The chain has expanded to over 200 restaurants world wide.

PF Chang's restaurants are noted for their fine decor, exhibition kitchen, and balanced menu.

Paul Fleming had previously established Fleming's Prime Steakhouse, Z'Tejas Grills, and Paul Martin's American Grill.

The Pei Wei Asian Diner chain was created as a subsidiary of PF Chang's in 2000 to compete in the growing fast food oriental sector. The restaurants serve, from a counter, a variety of oriental cuisine including sushi, egg rolls and Chinese cuisine. By 2015, Pei Wei had grown to over 200 location.

In 2012, PF Chang's was acquired by a private equity firm called Centerbridge Partners. The company operates under the name Wok Parent which continues to be headquartered in Scottsdale.

Both sites include online ordering and catering options. PF Chang's also takes online reservations.

The videos below talks about the art of cooking with a wok.
